I have the same problem. I met my girlfriend online in January 2001, we met in person in April, I bought her a ring on Valentines day the next year.
I think you should do like we did, decide together which date will be the significant one. We also acknowledge and remember the other dates.

I really like your take on this. I think it really is crazy to think that we can ever expect one label to fully describe the complexities of any human being. I also agree that the labels that I tend to identify with do a better job of describing what I am not that what I really am.
